Quick Soup for Better Vision!

Ingredients:

  • 1 tablespoon of vegetable oil
  • 1 red onion
  • 8-12 carrots
  • 2 tablespoons of grated ginger root
  • 50 grams of rice
  • 800ml of vegetable or chicken broth
  • 2 tablespoons of freshly squeezed lemon juice
  • salt and pepper to taste
  • fresh parsley for garnish

Preparation:

1. In a large pot heat the oil on a medium temperature. Add the chopped onion and saute it for about 3 minutes until it softens.
2. Add the cleaned carrots cut into cubes and ginger. Sauté for about 5 minutes until the vegetables start to soften. Then put in the rice.
3. Fill in the broth and wait for it to boil. Then reduce to a moderate temperature and cook for another twenty minutes, until the carrots and rice are cooked.
4. At the end of cooking, remove the carrots from the pot, mix them with blender, and put them back into the soup.
5. Season the soup with salt and pepper, and lemon. Serve with freshly chopped parsley.
