Eat Zucchini for Good Vision

Harvard University study, which included nurses, and lasted for 12 years, showed that women who ate fruits and vegetables rich in beta-carotene had 39 percent less likely risk of cataract. With spinach and sweet potatoes, zucchini were one of the vegetables that protected from cataract in the largest amount.
Interestingly, with women who ate carrots risk of cataract has not decreased. Experts explain the fact that, unlike the carrot, zucchini contain lots of potassium. Potassium helps prevent high blood pressure, which contributes to the emerging of cataract.

Zucchini contain more than one third of the recommended daily allowance of vitamin C. This antioxidant protects eyes from those types of oxidative damage caused by eye diseases such as cataracts.
